Valle Eatery & Bar sits inside the Hilton Garden Inn in Lompoc, but unlike a typical hotel restaurant it is an independent concept created in collaboration with a local Lompoc chef, designed to highlight the bounty of fresh produce and ingredients found on the Central Coast. The menu draws on a broad range of cultures, and the bar pours handcrafted seasonal cocktails made from local ingredients alongside local wines and beers on tap. Executive Chef Ofelio Flores trained at the Culinary Institute of America in St. Helena and Hyde Park, New York, and worked his way up through New York kitchens before serving as Executive Chef at the Marriott in Buellton — and he is a seven-time winner of the Buellton Wine & Chili Festival. Breakfast is open to the public daily, lunch and dinner run through the evening, and happy hour is daily from 2-5pm plus all day on Sundays.
